It’s March and that means I am officially don’e with winter, but winter isn’t done with me which is not ideal. I have started searching flights on Kayak and Southwest and getting the itch to go somewhere where spring has actually sprung I am heading to Dallas in a couple weeks though to watch some friends run a marathon, so that should be enough to get me by for another month… probably.
There are a LOT of things that make me happy in the summer, I could go on and on and it would make me a little depressed since that is so far from now, but one of the things that made me the happiest growing up were the GLORIOUS blackberries that grew all over my yard. There were so many and they ripened SO fast that you could pick buckets of them and eat them as you went and you would still not get them all before they went bad. They were always juicy and sun-kissed and perfectly plump… I can almost taste them now. My absolute favorite was baking a batch of peanut butter cookies, you know the ones with the fork marks across the top, and smash the blackberries on top. It was like the perfect peanut butter and jelly combination.
This childhood fave was what inspired these “peanut butter” thumbprint cookies! You can make them in the tradionational fashion and eat them plain or you can make them AMAZING but using your favorite flavor of jam/jelly/preserves to turn them into thumbprints! I used fig spread because I totally miss it spread on crackers with brie, but blackberry jam would be my close second. Strawberry? Apricot? Grape? Whatever floats your jammy boat
